Another significant professional development of ours is the tempering machine, with which, in regulated temperatures of between 6-7ºC, it is possible to so-called “puffer-store” first of all the XXL-products and, then, all of our pre-leavened and express products. In other words, it is possible to extend technological time in the strict sense by keeping a constant temperature, thus establishing a baking “reserve fund” with the purpose of dealing with the fluctuating demands in outlets (that is, when sometimes more or sometimes fewer customers turn up). This device is also an individual development of ours, one that is cost-effective and extremely productive. In the case of daytime technologies it extends tempering time to four and a half hours on the average. It is also suitable for putting products prepared for baking inside it in the evening, on a tray, so that baking can be commenced in the morning with practically no waiting time.
